• Strong commitment to delivering exceptional ‘FIVE-Star’ Food and Beverage Experiences, with a proven ability to drive revenue, maximise profitability and manage costs effectively.
  
• A minimum of 5 years of experience in senior Food and Beverage leadership, ideally within a luxury hotel, lifestyle hospitality or high-volume multi-outlet environment.
  
• Proven experience in leading and overseeing multiple Food and Beverage operations, including restaurants, bars, nightlife venues and In-Room Dining, preferably within a luxury or lifestyle hospitality environment.
  
• Demonstrated ability to deputise for the Director of Food and Beverage, taking full accountability for the Division’s operational performance, financial results and guest experience in their absence.
  
• Strong commercial acumen with proven experience in P&L management, budgeting, forecasting, revenue generation, cost control and operational efficiency.
  
• Proactive and innovative in developing next-level Food and Beverage concepts, service experiences and operational strategies that enhance guest satisfaction and business performance.
  
• Exceptional leadership and people-management skills, with the ability to inspire, coach and develop a high-performing FIVE Tribe across multiple outlets and teams.
  
• Strong problem-solving and decision-making skills, with the ability to remain composed and solutions-focused within a fast-paced, high-volume and dynamic operational environment.
  
• ‘FIVE-Styled’ visionary thinking, demonstrating creativity, ownership and a relentless drive to challenge the status quo and elevate operational standards.
  
• A meticulous eye for detail, with a strong focus on service excellence, quality assurance, hygiene, grooming and compliance.
  
• Strong understanding of Food and Beverage regulations, licensing requirements, food safety and health & safety standards.
  
• Excellent organisational, communication and stakeholder-management skills, with the ability to collaborate effectively with Executive Chefs, Operations, Finance, Sales & Marketing and other key stakeholders.
  
• Partners with the Director of Food and Beverage in strategically leading and managing the entire Food and Beverage Division, ensuring seamless operations, exceptional service delivery and consistent achievement of FIVE’s Gold Standards.
  
• Oversees the day-to-day operations of all Restaurants, Bars, Nightlife Venues and In-Room Dining, ensuring consistent execution of operational standards, service excellence and guest satisfaction across all concepts.
  
• Deputises for the Director of Food and Beverage in their absence, assuming full accountability for the Division’s operational, financial and commercial performance.
  
• Provides strategic direction and operational support to Outlet Managers and Department Heads, ensuring clear accountability, effective leadership and consistent performance across all Food and Beverage operations.
  
• Drives the financial performance and profitability of the Food and Beverage Division, working closely with the Director of Food and Beverage and Finance to achieve revenue, GOP, payroll, cost and profitability targets.
  
• Supports the development and management of annual budgets, business plans, forecasts and sales strategies, ensuring alignment with FIVE’s overall commercial objectives.
  
• Continuously analyses outlet performance, identifying revenue opportunities, cost-saving initiatives and operational efficiencies to maximise profitability.
  
• Monitors and drives effective manning, payroll, rostering, inventory, purchasing and cost-control strategies, ensuring resources are optimised without compromising service standards.
  
• Partners with the Executive Chefs on menu engineering, pricing, portion control, product quality and food cost optimisation, ensuring concepts remain commercially viable and aligned with FIVE’s positioning.
  
• Leads the development, implementation and continuous improvement of Food and Beverage standards, policies, procedures and operating strategies across all outlets.
  
• Drives a culture of continuous improvement, innovation and operational excellence, identifying new trends, technologies, service methods and product opportunities within the luxury hospitality and lifestyle market.
  
• Regularly monitors competitor hotels, restaurants, bars and nightlife venues, identifying emerging trends and opportunities to strengthen FIVE’s competitive positioning.
  
• Champions guest satisfaction and service excellence, personally engaging with VIP guests, resolving escalated concerns and ensuring consistent delivery of memorable FIVE-Star experiences.
  
• Drives online reputation and guest feedback scores, analysing trends and implementing targeted action plans to continuously enhance the guest journey.
  
• Ensures all Food and Beverage ‘FIVERs’ consistently adhere to grooming, hygiene, food safety, health & safety and operational standards, maintaining FIVE’s distinctive brand image.
  
• Leads and supports training, coaching and talent development initiatives, building a strong leadership pipeline and supporting succession planning across the Food and Beverage Division.
  
• Inspires Managers and ‘FIVERs’ through bespoke coaching, performance management and continuous development, fostering a high-performance and accountable culture.
  
• Works closely with Sales & Marketing, Finance, Culinary, Engineering, Security, Rooms and other key Departments to ensure seamless cross-functional operations and successful execution of Food and Beverage initiatives.
  
• Supports the planning and execution of major events, activations, launches and high-volume operational periods, ensuring flawless delivery and commercial success.
  
• Ensures all Food and Beverage operations remain compliant with FIVE policies, licensing requirements, regulatory standards and applicable food safety and health & safety legislation.
  
• Maintains operational stability and service consistency across all existing concepts while supporting the development and launch of new Food and Beverage initiatives.
  
• Carries out all assignments and strategic directives delegated by FIVE’s Senior Management, taking full ownership and accountability for assigned responsibilities.
